Simple Vegan Pancake Recipe

Heyo!

It's finally pancake day, and I thought the best way to celebrate this brilliant day was to share with you a vegan pancake recipe that I've been mastering lately, it's very simple and you can't really go wrong with it!

This is great if you suffer from allergies to milk and dairy, but also if you're pretty poor because you can sub in normal milk instead of the soy and it's basically the same! (you just need to add another tbsp each of sugar and flour) With only five steps and taking less than five minutes from ingredient to the plate, you'd be mad not to try them!

This recipe makes 6 small pancakes, or if you're like me and like them to be bigger than your face it'll do 4 at most! 



Ingredients

200g plain flour
1 tbsp sugar
2 tsp baking powder
A pinch of salt
240ml soya milk (any plant-based or normal milk works)
2 tbsp oil (I use vegetable, but use whatever you have)
(1-2tsp of oil for the frying pan, depending on how big your pan is!)

*for chocolate pancakes, add 1-2 tbsp of cocoa powder*

Method

1. Put all of the dry ingredients into a bowl or jug and mix them together
(I use a jug because it makes it much easier to pour it into the pan to cook them)

2. Add in the oil and soya milk and mix together until all of the lumps are gone and the mix is of a good, thick consistency

3. Heat the rest of the oil up in a frying pan on a medium heat and pour some of the mixture into it, try to get a good round shape, and then reduce the heat so the pancake cooks all the way through without burning 

4. Wait for the top of the pancake to start bubbling (this usually takes 2-3 minutes depending on the size and thickness of the pancake), then flip it over (I use a spatula, but some of you may be brave enough to flip it into the air, your choice!) and cook for another 2-3 minutes or so until golden brown - you will know when this is done as it will smell amazing!

5. Remove from the pan onto a plate and enjoy whilst you make more, or you can save the rest of the mix in the fridge for a couple of days, or freeze for next time you want a sweet treat! Serve with your favourite toppings, mine are maple syrup and dried cranberries but do what works for you! 

With pancakes being so easy to make, I reckon even my dad who is pretty hopeless at cooking could easily give these a go and have them turn out edible!
